Chicken, Tofu and baby Spinach salad

(Serves 4)

(prep: 15 mins)

  • ½ bag ecoLEAF baby Spinach, trimmed and rinsed
  • 1 chicken breast, poached and shredded
  • 1 pack silken tofu, cut into cubes
  • 1 cucumber, finely sliced
  • (Optional) 1 yellow capsicum cut into strips
  • (Optional) 1-2 Spring onions, finely sliced

Dressing

  • 1 tsp Sesame oil
  • 1 tsp light soy sauce
  • ½ tsp ginger
  • Pinch of toasted sesame seeds

Preparation

Combine dressing ingredients in a small bowl and top with sesame seeds

Gently mix the poached chicken, silken tofu, cucumber, capsicum and green onions.

Place ecoLEAF baby spinach leaves into a nest shape in a small bowl. Top with the chicken and tofu mixture. Drizzle the soy dressing over the top of the salad and enjoy.
