Gluten Free, Low Fructose, Low FODMAP
Pre-heat a BBQ or griddle pan so it is hot.
Prepare the chicken by rubbing with 1 tablespoon of olive oil and then sprinkling with salt and pepper. Place the chicken on the BBQ or griddle pan and cook until cooked through. Remove from the heat. Slice the chicken.
Meanwhile, prepare the zucchini noodles. Using a spiraliser, turn the zucchinis into thin ribbons of noodles.
Heat a large frying pan or wok over a medium-high heat. Add 1 tablespoon of olive oil and the noodles, and cook quickly for one minute. Stir through the pesto then remove from the heat.
To serve, place the pesto noodles on a plate, top with slices of chicken and serve immediately.Share This:
