Prosciutto and Kale Salad

(Serves 2)


  • ½ bag of ecoLEAF Salad Kale
  • 4 slices of prosciutto
  • 1 kiwifruit
  • ½ mango


  • 2 tablespoons natural yoghurt
  • ½ clove of garlic, grated
  • 1 teaspoon of lemon juice
  • ½ teaspoon lemon zest
  • 1 teaspoon extra virgin olive oil


To prepare the dressing, add all ingredients into a small bowl and mix to combine.

Wash and trim the ecoLEAF salad kale leaves and place into a shallow salad bowl or platter. Slice the kiwifruit into wedges and dice the mango and arrange fruit around the kale. Roughly tear prosciutto and layer around the salad. Drizzle dressing across salad and enjoy.
