Rocket Pesto

(4-6 Serves)


Gluten Free, Vegetarian, Low Fructose, Low FODMAP


  • 120g rocket leaves, washed
  • 4 tbs pine nuts, lightly toasted
  • 60g Parmesan cheese, grated
  • 6 tbs olive oil
  • 1 tsp salt
  • 1 tsp pepper



Place all of the ingredients into a food processor or blender, and blend until combined and the pesto is a consistency you like.  If you like a chunky pesto, blend it for less time.  If you like a smooth and creamy pesto, blend it for longer.

This pesto works well with vegetable noodles, grilled chicken or as a dip with vegetable crudités.
