Rocket Salad with Orange & Fennel


• Juice of half a lemon
• 1 large fennel bulb, stems removed, fronds reserved and bulbs finely sliced
• 3 teaspoons extra virgin olive oil
• 3 teaspoons balsamic vinegar
• 180g rocket
• 1 orange and 2 ruby or blood oranges , segmented


1. Whisk together oil and vinegar in a mixing bowl, add the orange, rocket and fennel
and toss well to coat. Season to taste
2. Add the fennel fronds, reserving a few to garnish and toss a little more to combine.
3. Serve in a large salad bowl or into individual serves, garnish with a few of the
reserved fronds.
