Sushi Rolls

Sushi Rolls

(Makes 2 sushi rolls)

Ingredients

  • 1 cup cooked Japanese-style Sushi Rice
  • 1 tbs rice vinegar
  • 2 nori sheets
  • ½ breast of cooked chicken (teriyaki or BBQ style)
  • ½ bag ecoLeaf baby Spinach- trimmed and rinsed
  • Mayonnaise (Japanese style)
  • Sushi mat

Method

Place warm cooked rice and rice vinegar into a bowl, stir and allow to cool.

In a separate bowl, pour hot water over the ecoLeaf baby Spinach, then quickly drain and squeeze water out.

Place one sheet of nori on the sushi mat.

Spread the rice over the nori sheet leaving a 2cm border around the edges.

Place the spinach, chicken and mayonnaise in the centre along the length of the nori.

Using the sushi mat, roll firmly.

Cut the roll into 2cm pieces using a sharp knife. Serve with soy sauce, pickled ginger and wasabi according to taste.
